I like how some peoples voices are in movies or games I play, so I was wondering if it is possible to change your voice to sound just like the person you hear.

To a certain extent, yes. Often if people live in different countries where the same language is spoken in a different accent they will begin to adopt that accent. Some stand up comics base their entire routine on imitating people. Some people are better at it than others, but it mostly comes down to how much you want to practice.
Listen to the voice you want to imitate, then try to talk that way into a recorder. When you listen to your own voice played back you can figure out how close it was and what you need to change to make it better. good luck.
